Happy 2nd Birthday!

IT IS MY TWO YEAR BLOG BIRTHDAY THIS MONDAY!


I have nearly been blogging for 2 years and in celebration of that I decided I would bake some cakes. I made some red velvet cakes (which were meant to be pink because we only had pink food colouring) and iced and decorated them.




This recipe is based on one from The Violet Bakery Cookbook.

Ingredients:

300g caster sugar
1/2 tsp sea salt
2 large eggs
125ml vegetable oil
2.5 tbsp red food colouring (I used pink, and I used paste instead of the liquid, so I eyeballed it.)
1 tsp vanilla extract
25g cocoa powder
280g plain flour
50g cornflour
250g plain yoghurt/buttermilk
1 tsp bicarbonate of soda
1 tbsp white wine vinegar

Preheat the oven 150°C/130°C/gas 2. Line your cupcake/muffin tins with cupcake/muffin cases.

In a large bowl combine the sugar, salt, eggs, oil, food colouring and vanilla. Whisk until they are combined and the sugar is beginning to dissolve.

In a separate bowl, sift together the flour, cocoa powder and plain flour and cornflour. Mix until fully combined.

Pour the buttermilk/yoghurt into a bowl/jug. In a separate bowl combine the bicarbonate of soda and the vinegar (in this part they froth up a ton and it is very exciting if you like science). Stir this mixture into the yoghurt.

Whisk half of the dry ingredients into the egg mixture. Then add in half of the yoghurt mixture in. Mix in the rest of the dry ingredients and then the rest of the yoghurt. Mix until smooth.

Spoon the mix into the cases and bake for 20 minutes.

Ice with some buttercream of your choice.
