Apple and Raspberry crumble (GLUTEN FREE)

Put apples and raspberries together and...

BAM you've got apple and raspberry crumble.

We had some friends come to visit us for a few days and we wanted to make them a nice pudding. Two of them are gluten AND dairy free so we had to try and find a suitable pudding.


I took the crumble topping from Chocolate and Zucchini and changed it so it was gluten free. Then I did some simple mixing and there it was. Crumble.

Here is the recipie:


Ingredients:

Crumble Topping:

100 grams gluten free plain white flour

100 grams ground almonds

50 grams muscovado sugar

50 grams caster sugar

80 ml oil (I used sunflower)


Filling:

Raspberries - I have no idea how many. Probably about 150 grams.

Apples - I used about 7 medium sized apples. Make sure you have a good apple to raspberry ratio...

A few glugs of Orange Juice


Method:

1. Preheat the oven to 180°C.

2. Mix all of the dry ingredients together in a medium mixing bowl.

3. Slowly pour in the oil, mixing with a fork.

4. Put the crumble topping into the fridge while you make the filling.

5. Peel, core and chop your apples. Add them to a mixing bowl.

6. Wash, then add the raspberries to the mixing bowl. 

7. Pour the orange juice over the fruit and mix well.

8. Pour the fruit into a bowl. Top with the crumble.

9. Cook the crumble in the oven for 30-35 minutes, until the top is golden brown.
